Today at theRHOK.com, Mrs. Priss wants some new crock pot or "slow cooker" recipes. So head over and link up, and find some new stuff to make. I might make a goal to use my crock pot every night one week! Heh. Also, I might need to buy a new one. This May it will turn 15 years old, like my marriage. Is that a long life for one?? (The crock pot, not the marriage. Ha!)
So here you go:
POTATO SOUP
Ingredients
6-8 pounds potatoes cubed (I leave the peel on, as it is nutritous. But clean well, obviously)
1 small onion, chopped (or, a cup of the frozen diced ones that I buy bc I HATE chopping onions. I cry the ugly cry. It isn't pretty)
2 tablespoons butter (you know, or more. If you want)
2 cubes chicken bouillon
2 tablespoons dried parsley
6 cups water
2 cups milk
1/2 cup all-purpose flour
Directions
Place the potatoes, onion, butter, chicken bouillon cubes, parsley and water into a slow cooker. Set on low and let cook for 6 to 8 hours.
At least half an hour before serving, stir together the milk and flour until no lumps remain, and mix into the soup. Cook for 30 minutes or until the soup is thickened.
Also, add in a 1/2 cup of or so of sour cream. Top with shredded cheese and fresh bacon bits to serve!

If you need a new crockpot you should check out Aldi's they have them sometimes and they are good ones and cheap. Woot!
Yum! I love potato soup but, have never made it! I'll have to give it a try sometime -My crock pot is getting up there too -I'd say it's almost 15 yrs. old as well -How long they DO they last?
